Every Home, Every Heart, Every Feeling, Every Moment of Happiness is incomplete without women! The theme this year is Women in leadership: Achieving an equal future in a COVID-19 world. It celebrates the remarkable efforts by women and girls around the globe to shape a more equitable future and the recovery from the COVID-19 pandemic.

We celebrate the steadfast women of The Karen Hospital who play a profound role in elevating our standards of care. Among our phenomenal women is Ms. Josephine Mbuthi, a Nutritionist and Dietitian who has played an active role in offering quality care to all our patients over the years.

Today’s fast-paced lifestyles only add more hurdles when it comes to maintaining a healthy daily routine. Healthy patterns of eating optimize the function of the immune system, improve immunometabolism, and are a modifiable contributor to the development of chronic disease that is highly associated with COVID-19 deaths.

Josephine advises that fruits and vegetables should be added into each meal for a balanced diet, and sometimes as a meal on its own. A diet rich in fruits and vegetables plays a key role in reducing risks of all major causes of illness and death. Fruits and vegetables are also low in fat, salt, and sugar and offer a good source of dietary fiber. As part of a well-balanced, regular diet and a healthy, active lifestyle, a high intake of fruit and vegetables can help reduce obesity and maintain healthy lifestyle, lower cholesterol levels and blood pressure.
